Matalascañas -- Gastronomy
Jabugo, Cortegana, Cumbres Mayores and Repilado, in Sierra de Huelva, produce the highest-quality cured hams, hardly surpassed by the hams of any other place. Iberian sausages like cured loin of pork, morcón (thick sausage cured with paprika), chorizos (Spanish sausage cured with paprika) and the traditional black pudding, a crucial ingredient for every stew and cocido, are excellent. Pure-breed Iberian pigs, fed exclusively with acorn in the meadows, give the best sausages in the world. Gurumelos is the name that the people of Huelva give to the Amanita ponderosa, an excellent mushroom that is prepared in a variety of ways. These include grilled with olive oil, garlic and parsley – a delicious recipe – and Huelva-style with potatoes and shrimp.
The influence of Arab confectionery can be felt at once in the pastries from Huelva, which combine the excellent mountain honey with the delicious almonds from the coast. Examples of these mouth-watering treats are the Bonares Easter cake, the cocas (type of bun) from Lepe, Ayamonte, Cartaya and Isla Cristina, the marzipan from Castañas de Fuenteheridos and the wonderful macaroons. Pine nuts, Andévalo's ring-shaped pastries and walnut sponge cakes are also exquisite.
As for the wines, the Designation of Origin Condado de Huelva offers some excellent fruity, young wines that are part of a traditional selection dominated by full-bodied wines. Excellent vinegar is also produced from old wine (yearly harvest, vintage and reserva). We can also find excellent liqueurs, which are good help to digest a heavy meal. From this group we must mention the morello cherry liqueurs, with low alcoholic content and excellent taste, made in La Sierra, Cuenca Minera and El Condado. The person visiting Huelva should not miss the opportunity to eat at some of its great restaurants, like La Plazuela and Las Candelas, both in Aljaraque.
