The most typical fish in León is trout, abundant in its rivers. Fried and cold, without bacon or cured ham as they are usually served elsewhere, trout is the star when it comes to fish in this region. Peppers from Bierzo, savoury pies from Villafranca, trout soup, white beans from Bañeza and cachelada con chorizo (a dish made with potatoes and Spanish sausage cured with paprika) are excellent dinner choices.León's confectionery requires a section of its own. Mantecadas from Astorga (biscuits made with almonds and lard) are the most representative dessert, but not the only one, since they share their fame with San Guillermo's bow-shaped pastries in Cistierna, with almond sponges, nicanores from Boñar and ring-shaped sponge cakes called bollo maimón. Flour, egg and sugar are the ingredients of frisuelos (similar to crêpes), roscas ciegas (with egg yolks and alcohol) and tranca la puerta biscuits. Also typical of this province are rice pudding, cream biscuits, fried milk pudding, etc. In some towns they make a dessert called guindillas de monja, which was originally made by nuns from Sahagún de Grafedes but have become a part of the local pastry tradition.
Wines and restaurants
The best wines in León are the wines from El Bierzo, with Designation of Origin. Red, white and rosé wines are all of exceptional quality. You can also go for the wines from Valdevimbre de los Oteros, a rosé kind that is light, fresh and fruity, with an orange-rosey colour to it. It is slightly sparkling as a consequence of a process called madreo that consists in adding whole grapes to the fermenting must. The small yield of this original and traditional wine, fully handcrafted, is very recommended. This course is situated right in the heart of the Costa del Golf, at the foot of the Mijas mountains, in the municipality of Alhaurin El Grande from which the course takes its name.
