The province of Granada has a rich and varied agriculture and the Arab presence in both the fields and the food can be perceived today in its full splendour because it has been wisely preserved. In Las Alpujarras, two different culinary trends cross paths: the Moorish and the Christian. All the ingredients that are used to make the traditional dishes of Granada grow in the fertile plains that surround the capital. These dishes include fried beans with cured ham, thistles, pipirrana salad (with tuna, onions, peppers, tomatoes, etc.) and the traditional gazpacho (a cold soup), present in all of Andalusia, but particularly good here in Granada. The cold winters in the mountains of Granada are the reason why many rich dishes are part of the local cuisine, as they are the best weapon against the inclemency of the weather. These include San Antón hotpot, eaten in the first weeks of the year, paprika porridge, fried breadcrumbs, Segura-style lamb stew and fried baby goat with garlic.
Cured ham from Trevélez is the star of Granada's gourmet products. This ham is cured on the sierra's open-air. To make it they use specially-raised white pigs that have to pass a strict quality-control process. For this reason, Trevélez's ham has worldwide fame, specially in Japan. In addition to ham, Granada also offers a wide variety of cured meats or chacinas, like cured loin, black pudding, Spanish sausages cured with paprika (chorizo) and more. They are all delicious with fried eggs and pauper's potatoes (fried with onions), in a combination known as plato alpujarreño. Try them also with some goat cheese for a delicious treat.
