When it is finished, it is greased with oil or butter to ensure its preservation. This cheese can be sold fresh or semi-cured, but also aged, which has quite a strong flavour and delicious smell.

The course is situated opposite the marina after which it is named. The round is 5,170 metres long and has a par of 71. It was designed by the Madrid architect Juan Ligués and has spectacular views of the sea and the beautiful natural surroundings, including a large number of magnificent spreading pine trees. The course consists of three par-3's, two par-5's, and thirteen par-4's. The longest hole is the 14th, a 456 metre par-5, and the shortest is the 13th, a par-3 which is 134 metres from the yellow tee. It is a course where those with a high handicap will enjoy using all of the clubs in their bag and lower handicaps will have to take a risk on every shot if their want to get round with a good score.

José María Olazábal was the brains behind the design of this 27-hole course situated on the coast of the province of Cadiz, covering an area of more than 400 hectares and belonging to two different municipalities, Rota and Chipiona. The round is comfortable and there is plenty of water.

The par-3 16th is particularly worth a mention as the green is surrounded by a lake. The course at Costa Ballena is considered to be one of the best courses in Spain, and there is also a prestigious golf school, a 9-hole course and a high-performance centre for professional players. It is situated 5 km from El Puerto de Santa María on the road to Rota.
